All of the ingredients are selected based on the season.<br \/>\nSoybeans harvested from these fields are used to make homemade miso. It takes two to three years for the miso to fully ferment inside the cool and dark storehouse.<br \/>\nAlthough not much is harvested, pickled vegetables are made using pickled daikon radish, Nozawana (Japanese leaf vegetable), and eggplants and provided to guests.<br \/>\nIngredients are bought locally as much as possible. But they don\u2019t just flush.<br \/>\nCombined septic tank systems have been installed, and even in alpine areas, both human waste and kitchen wastewater are being treated and discharged.<br \/>\n(Neishidake Mountain Lodge is the only mountain lodge where installing an on-site septic tank would be too difficult, so waste is instead carried away by helicopter.)<\/div>\n<div class=\"descr_big\">In 1998, Natsuzawa Kosen Mountain Lodge became the first mountain lodge to install fully functioning toilets in Japan.<\/div>\n<div class=\"descr_big\">In 2002, a fully functioning toilet was installed at Iodake Mountain Lodge at the ridgeline of Mt.
